We first discovered this mouth-watering snack on our many trips to Antigua as children. Long summer days spent playing in the ocean would always result in a late afternoon drive to our favorite patty shack.
From his tiny hut, the chef would slice open the freshly baked patties, fill them with crisp cool salad and sandwich the whole lot between a still warm Coco bread bun.
This among the many other foodie treats were the highlights of our trips.
We never forgot those wonderful tasty afternoons and now want to share that love with you guys.
